Instructions
Preheat oven and line baking sheets.
Whisk dry ingredients together.
Dissolve espresso in coffee liqueur.
Cream butter and sugars.
Add eggs and vanilla.
Combine wet and dry mixtures.
Chill dough for 30 minutes.
Scoop and bake cookies.
Cool cookies completely.
Beat mascarpone, sugar, cream, and vanilla.
Assemble cookies with filling.
Dust with cocoa just before serving.
