Ingredients

For the Chicken

  • 1 pound chicken breasts boneless, skinless, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • salt to taste
  • black pepper to taste

For the Orzo Pasta

  • 1.5 cups orzo pasta
  • 3 cups chicken broth low-sodium preferred
  • 1 cup heavy cream or half-and-half for lighter version
  • 3 cloves garlic minced
  • 2 lemons zest of both
  • 0.25 cup lemon juice fresh squeezed
  • 0.5 cup Parmesan cheese freshly grated
  • 2 tablespoons butter
  • 2 tablespoons parsley fresh, chopped
  • 1 cup baby spinach optional
  • 0.5 cup cherry tomatoes halved, optional

Instructions

  • Season chicken.
  • Sauté in skillet.
  • Sauté garlic.
  • Add broth and bring to a boil.
  • Stir in orzo and cook until tender.
  • Add cream, lemon zest, and lemon juice.
  • Add chicken back, stir in cheese and butter.
  • Add spinach and parsley. Stir to combine.
  • Remove from heat and let rest 2 minutes before serving.
