Ingredients

For the Chicken

  • 1 lb Chicken breast Boneless, skinless, diced
  • 2 tablespoon Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Italian seasoning
  • Salt & pepper To taste

For Pasta and Sauce

  • 12 oz Fettuccine Or linguine; gluten-free if desired
  • 4 tablespoon Butter Unsalted
  • 4 Garlic cloves Minced
  • 0.5 cup White wine Optional, sub with chicken broth
  • 1 cup Heavy cream Full-fat preferred
  • 0.5 cup Parmesan cheese Freshly grated
  • 2 Lemons Zested and juiced
  • 0.25 cup Lemon juice From zested lemons
  • 2 tablespoon Fresh parsley Chopped
  • 0.25 teaspoon Red pepper flakes Optional, for a little heat

Optional Add-ins

  • 1 cup Baby spinach Add at the end to wilt
  • 0.5 cup Sun-dried tomatoes Chopped
  • 0.25 cup Pine nuts Toasted, for texture

Instructions

  • Season chicken with garlic powder, Italian seasoning, salt, and pepper.
  • Heat olive oil and cook chicken until golden and cooked through. Set aside.
  • Boil salted water, cook pasta until al dente. Reserve 1 cup pasta water.
  • In same skillet, melt butter and sauté garlic for 30 seconds.
  • Add white wine, reduce by half.
  • Stir in cream, lemon zest, and juice. Simmer gently.
  • Return chicken, add pasta, and toss with sauce.
  • Stir in Parmesan, parsley, and red pepper flakes. Use pasta water as needed.
  • Season to taste and serve immediately.
