Ingredients

For the Chicken

  • 4 boneless skinless chicken breasts about 6 oz each
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Lemon Herb Marinade

  • cup fresh lemon juice about 2 large lemons
  • 2 tablespoon lemon zest
  • 3 cloves garlic minced
  • 2 tablespoon fresh rosemary chopped
  • 2 tablespoon fresh thyme leaves
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon dried oregano
  • ¼ cup olive oil

Optional Additions

  • 1 tablespoon honey for sweetness
  • ½ teaspoon red pepper flakes for heat

Instructions

  • Whisk lemon juice, zest, garlic, herbs, and olive oil. Season with salt and pepper.
  • Coat chicken in marinade, refrigerate 30 minutes to 4 hours.
  • Heat skillet with olive oil, sear chicken 6–7 min per side, baste with marinade.
  • Ensure internal temperature reaches 165°F (74°C).
  • Let chicken rest 5 min under foil.
  • Slice and enjoy with favorite sides.
