Ingredients

the Pasta

  • 450 g penne or rigatoni pasta
  • 2 tablespoons kosher salt for pasta water

the Sauce

  • 4 tablespoons extra virgin olive oil
  • 1 medium onion finely diced
  • 6 cloves garlic minced
  • ½ teaspoon red pepper flakes
  • ¼ cup Chicken broth
  • 28 oz San Marzano whole peeled tomatoes Hand-crushed
  • 1 cup heavy cream
  • 2 tablespoons butter
  • ½ cup Parmigiano-Reggiano freshly grated
  • Salt and freshly ground black pepper
  • Fresh basil leaves

Instructions

Prep Ingredients

  • Finely dice onion
  • Mince garlic
  • Hand-crush tomatoes

Cook Pasta

  • Boil salted water
  • Cook pasta 2 minutes less than package instructions
  • Reserve 1 cup pasta water before draining

Make Sauce

  • Sauté onion in olive oil (5 mins)
  • Add garlic and red pepper flakes (1 min)
  • Add chicken broth, reduce by half (2-3 mins)
  • Add tomatoes, simmer (10 mins)
  • Stir in cream and butter (5 mins)

Finish Dish

  • Add pasta to sauce
  • Add ½ cup Parmigiano-Reggiano
  • Stir in pasta water as needed
  • Cook until pasta is al dente
  • Season with salt and pepper
  • Garnish with basil
