Ingredients

Base Ingredients

  • 2 cans (15 oz each) chickpeas drained and rinsed
  • 6 oz feta cheese crumbled
  • 1 large cucumber diced
  • 1 cup cherry tomatoes halved
  • ½ red onion finely chopped

Fresh Herbs & Aromatics

  • cup fresh parsley chopped
  • 2 tablespoon fresh dill chopped
  • 2 cloves garlic minced

Lemon Dressing

  • ¼ cup olive oil extra virgin
  • 3 tablespoon lemon juice fresh
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste

Instructions

  • Drain and rinse well.
  • Dice cucumber, halve tomatoes, chop onion.
  • Break into small chunks.
  • Whisk olive oil, lemon juice, zest, garlic, oregano, salt, pepper.
  • Add chickpeas, cucumber, tomatoes, onion to bowl.
  • Mix gently with parsley and dill.
  • Pour over salad, combine gently.
  • Let sit 15 minutes before serving.
