Ingredients

Pie Crust

  • cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup unsalted butter cold, cubed

Plum Filling

  • 3 lbs ripe plums pitted and sliced
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 3 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoon lemon juice fresh
  • 1 tablespoon vanilla extract
  • 2 tablespoon butter cut into small pieces

For Assembly

  • 1 egg beaten for egg wash
  • 2 tablespoon coarse sugar for sprinkling on top crust

Instructions

  • Make crust dough and chill
  • Toss sliced plums with filling ingredients
  • Let plum mixture sit and strain excess juice
  • Roll out dough and fill pie dish
  • Add filling and butter pieces
  • Top with lattice crust, egg wash, and sugar
  • Bake at 425°F for 20 min, then at 375°F for 35–40 min
  • Cool for at least 3 hours on a wire rack
