  • 2 sheets puff pastry thawed (17.3 oz package)
  • 1 large egg beaten
  • 2 tablespoon whole milk
  • 2 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • 1 pinch sea salt

Optional Fillings

  • 4 oz dark chocolate chopped
  • ½ cup almond paste
  • 2 tablespoon apricot jam
  • ¼ cup sliced almonds

Instructions

  • Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper.
  • On a lightly floured surface, roll each pastry sheet slightly and cut into 4 equal triangles per sheet.
  • From the wide end, roll each triangle toward the tip to form a croissant shape. Tuck the tip under. Add fillings if desired before rolling.
  • In a mixing bowl, whisk egg and milk. Brush croissants with egg wash, sprinkle with sugar or sliced almonds. Let rest for 10 minutes.
  • Bake for 15–18 minutes until golden and puffed. Cool on baking sheet for 5 minutes, then transfer to wire rack.
