Instructions
Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper.
On a lightly floured surface, roll each pastry sheet slightly and cut into 4 equal triangles per sheet.
From the wide end, roll each triangle toward the tip to form a croissant shape. Tuck the tip under. Add fillings if desired before rolling.
In a mixing bowl, whisk egg and milk. Brush croissants with egg wash, sprinkle with sugar or sliced almonds. Let rest for 10 minutes.
Bake for 15–18 minutes until golden and puffed. Cool on baking sheet for 5 minutes, then transfer to wire rack.
