Ingredients

For the Cookie Dough

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 cup unsalted butter softened
  • 1 ½ cups granulated sugar
  • ½ cup light brown sugar packed
  • 1 large egg
  • ¾ cup pumpkin puree
  • 2 teaspoon vanilla extract

For Rolling and Topping

  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  • Preheat oven to 375°F (190°C) and line baking sheets.
  • Whisk flour, baking soda, salt, and spices in bowl.
  • Beat butter and sugars until fluffy.
  • Mix in egg, pumpkin, and vanilla.
  • Slowly add dry mix to wet ingredients and mix until just combined.
  • Roll dough balls in cinnamon sugar mixture.
  • Bake 8-10 minutes until edges set.
  • Let rest 5 minutes on baking sheet, then transfer to rack.
