Ingredients

Main Ingredients

  • 3 cups Rice Krispies cereal
  • 1 cup creamy peanut butter
  • ½ cup powdered sugar
  • 2 tablespoon honey
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Optional Chocolate Coating

  • 12 oz semi-sweet chocolate chips
  • 2 tablespoon coconut oil or shortening

Instructions

  • Line a baking sheet with parchment paper.
  • In a large bowl, combine peanut butter, powdered sugar, honey, vanilla, and salt. Stir until smooth.
  • Add Rice Krispies cereal and mix until fully coated.
  • Use a cookie scoop to portion and roll into smooth balls.
  • Place the balls on the prepared sheet and refrigerate for 30 minutes.
  • Optional: Melt chocolate chips with coconut oil in a microwave-safe bowl and dip each ball until coated.
  • Return to fridge for 15 minutes or until chocolate is set.
