Ingredients

  • 1 lb fresh salmon fillets fresh, skin removed, cubed
  • 2 tablespoons olive oil
  • 1 large onion diced
  • 3 carrots sliced into rounds
  • 2 celery stalks chopped
  • 4 cloves garlic minced
  • 4 cups fish stock or vegetable stock
  • 1 cup heavy cream or coconut milk for dairy-free
  • 2 medium potatoes diced into ½-inch cubes
  • 1 cup fresh spinach
  • 1 tablespoon fresh dill chopped
  • 2 bay leaves whole
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 lemon juiced

Instructions

  • Sauté vegetables in oil
  • Add garlic
  • Pour in stock + herbs
  • Add potatoes Root Veggies
  • Simmer until nearly tender
  • Add salmon + cream
  • Cook until salmon is opaque
  • Add spinach, dill, lemon
  • Season and remove bay leaves
