Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment.
Whisk flour, baking soda, and fine sea salt in a bowl.
Cream butter with brown sugar and granulated sugar until fluffy.
Beat in honey, eggs, and vanilla until combined.
Mix in dry ingredients until just combined. Fold in add-ins if using.
Scoop 2-tablespoon portions onto baking sheets, 2 inches apart.
Sprinkle tops with flaky sea salt.
Bake 10–12 minutes, until edges are golden and centers look slightly underbaked.
Let cookies cool 5 minutes on sheet, then transfer to wire racks.
Drizzle with honey if desired and store airtight once cooled.
