Ingredients

Main Cookie Base

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt

  • ¾ cup brown sugar packed
  • ½ cup granulated sugar
  • cup honey raw or wildflower preferred
  • 2 large eggs room temperature
  • 2 teaspoon vanilla extract

For Topping

  • 1-2 teaspoon flaky sea salt for sprinkling
  • 2 tablespoon honey for drizzling (optional)

Optional Add-ins

  • 1 cup old-fashioned oats
  • ½ cup toasted almonds chopped
  • cup mini chocolate chips

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment.
  • Whisk flour, baking soda, and fine sea salt in a bowl.
  • Cream butter with brown sugar and granulated sugar until fluffy.
  • Beat in honey, eggs, and vanilla until combined.
  • Mix in dry ingredients until just combined. Fold in add-ins if using.
  • Scoop 2-tablespoon portions onto baking sheets, 2 inches apart.
  • Sprinkle tops with flaky sea salt.
  • Bake 10–12 minutes, until edges are golden and centers look slightly underbaked.
  • Let cookies cool 5 minutes on sheet, then transfer to wire racks.
  • Drizzle with honey if desired and store airtight once cooled.
