Ingredients

  • 4 large eggs Free-range for better flavor
  • 2 cups fresh baby spinach roughly chopped
  • ½ cup crumbled feta cheese Crumbled

  • ¼ small onion finely diced (optional)
  • Salt and freshly ground black pepper to taste For seasoning
  • 1 clove garlic minced (optional)

Instructions

Prepare Your Ingredients

  • Crack the eggs into a medium bowl and add milk or water
  • Whisk until well combined and slightly frothy
  • Season with salt and pepper
  • Wash and roughly chop the spinach if using large leaves
  • Crumble the feta cheese if it hasn't been pre-crumbled

Cook the Vegetables

  • Heat olive oil in a non-stick skillet over medium heat
  • If using, sauté the diced onion until translucent (about 2-3 minutes)
  • Add minced garlic if using and cook for 30 seconds until fragrant
  • Add spinach and cook until just wilted (about 1-2 minutes)
  • Remove vegetables from pan and set aside

Cook the Omelette

  • Add a little more oil to the pan if needed
  • Pour in the beaten eggs, tilting the pan to spread evenly
  • As the eggs begin to set, use a spatula to gently push the cooked edges toward the center
  • When the top is almost set but still slightly wet, add the cooked spinach mixture to one half
  • Sprinkle crumbled feta cheese over the spinach
  • Carefully fold the empty half over the filling
  • Cook for another minute until the cheese starts to melt
