Instructions

  • Preheat oven to 375°F and line baking sheets with parchment.
  • Whisk flour, baking soda, and salt in a bowl; set aside.
  • Cream butter and sugar until light and fluffy.
  • Add egg, vanilla, lemon zest and juice; mix to combine.
  • Slowly add dry ingredients; mix until just combined.
  • Chill dough for 30 minutes.
  • Roll dough between parchment to ¼-inch thickness.
  • Cut shapes with cookie cutters.
  • Place on sheets and bake 8–10 minutes.
  • Cool for 5 minutes on sheet, then transfer to rack.
  • Mix icing ingredients; color and decorate cooled cookies.
