Ingredients

For Cilantro Lime Rice

  • 2 cups jasmine rice rinsed
  • 3 cups chicken broth or vegetable broth
  • 2 tablespoon olive oil
  • ¼ cup fresh cilantro chopped
  • 2 limes juiced
  • 1 teaspoon salt
  • ½ teaspoon garlic powder

For Seasoned Beef

  • 1.5 lbs ground beef 80/20 blend
  • 2 tablespoon olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 tablespoon taco seasoning homemade or store-bought
  • ½ cup beef broth
  • Salt and pepper to taste

For Toppings

  • 1 can black beans 15 oz, drained & rinsed
  • 1 cup corn kernels fresh or frozen
  • 2 cups shredded lettuce
  • 2 medium tomatoes diced
  • ¼ cup red onion finely diced
  • 2 avocados sliced
  • 2 cups shredded Mexican cheese blend
  • 1 cup sour cream
  • 1 cup salsa or pico de gallo
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  • Rinse and toast rice in olive oil, add broth, salt, and garlic powder. Simmer until tender, then stir in cilantro and lime juice.
  • Sauté onion and garlic in olive oil. Add ground beef, cook until browned, then stir in taco seasoning and broth. Simmer until thickened.
  • Warm black beans, slice avocado, dice tomatoes and onion, shred lettuce.
  • Layer rice, beef, beans, corn, cheese, veggies, salsa, avocado, and sour cream. Garnish with cilantro and lime.
