Ingredients

Main Components

  • 4 cups frozen tater tots
  • 8 large eggs
  • 1 lb breakfast sausage
  • 2 cups shredded cheddar cheese
  • ¼ cup butter
  • salt and pepper to taste

For Sausage Gravy

  • cup all-purpose flour
  • 3 cups whole milk
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika

Optional Toppings

  • 4 green onions chopped
  • ½ cup crispy bacon bits
  • 2 tablespoon fresh chives
  • hot sauce for serving

Instructions

  • Preheat oven and bake tater tots until golden and crispy.
  • In a heavy-bottom skillet, brown the sausage. Sprinkle flour over sausage and cook for 2 minutes.
  • Slowly whisk in milk, add garlic powder and paprika, then simmer until thickened into gravy.
  • Whisk eggs with butter in a bowl. Cook on low heat in a non-stick frying pan until fluffy and scrambled.
  • To assemble: layer tater tots, scrambled eggs, sausage gravy, shredded cheese, and any desired toppings in serving bowls.
