Ingredients

  • 2 lbs Roma tomatoes Or 28 oz can crushed tomatoes
  • ½ cup Fresh basil leaves Divided
  • 4 Garlic cloves Minced
  • ¼ cup Extra virgin olive oil
  • 1 Yellow onion Medium, finely diced
  • 1 teaspoon Salt Or to taste
  • ½ teaspoon Black pepper
  • 1 teaspoon Sugar Optional, to balance acidity
  • 2 tablespoon Tomato paste Optional
  • 1 Bay leaf Optional
  • ¼ teaspoon Red pepper flakes Optional
  • 2 tablespoon Butter Optional – for richness

Instructions

  • Blanch and peel tomatoes, chop roughly.
  • Heat oil, cook onions 5–7 minutes until translucent.
  • Add garlic and cook until fragrant.
  • Stir in tomato paste (if using), cook 2 minutes.
  • Add tomatoes, half of basil, seasonings, and bay leaf. Simmer gently.
  • Cook 20–25 minutes, stirring occasionally.
  • Remove bay leaf, stir in remaining basil and butter if using.
  • Taste and adjust salt, pepper, or sugar as needed.
