Instructions
Blanch and peel tomatoes, chop roughly.
Heat oil, cook onions 5–7 minutes until translucent.
Add garlic and cook until fragrant.
Stir in tomato paste (if using), cook 2 minutes.
Add tomatoes, half of basil, seasonings, and bay leaf. Simmer gently.
Cook 20–25 minutes, stirring occasionally.
Remove bay leaf, stir in remaining basil and butter if using.
Taste and adjust salt, pepper, or sugar as needed.
