Ingredients

For the Protein

  • 1 lb chicken breasts boneless skinless, cut into bite-sized pieces
  • 12 oz andouille sausage sliced into rounds
  • 2 tablespoon olive oil
  • 1 tablespoon Cajun seasoning

For the Pasta & Sauce

  • 12 oz penne pasta (or rigatoni)
  • 1 large onion diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup Parmesan cheese grated
  • 2 tablespoon tomato paste
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper adjust to taste
  • salt to taste
  • black pepper to taste
  • 2 green onions chopped (for garnish)

Instructions

  • Coat chicken with Cajun seasoning and rest 10 min.
  • Sear in skillet until golden, 6–7 min, remove.
  • Cook sausage slices until browned, 3–4 min, remove.
  • Cook pasta until al dente, reserve 1 cup pasta water.
  • Cook onion and peppers 5 min, add garlic and tomato paste, stir 1 min.
  • Add broth, cream, paprika, cayenne; simmer. Stir in Parmesan.
  • Return chicken, sausage, pasta; toss to coat. Thin sauce with pasta water if needed.
  • Garnish with green onions, serve hot.
