  • 8 slices brioche or challah bread thick cut
  • ¾ cup pumpkin puree canned
  • 4 large eggs
  • ½ cup heavy cream
  • ¼ cup whole milk
  • 2 tablespoon maple syrup
  • 1 teaspoon vanilla extract

Instructions

  • Whisk together pumpkin puree, eggs, cream, milk, maple syrup, vanilla extract, spices, and salt until smooth. Let sit for 5 minutes.
  • Dip each slice of bread into the custard mixture for about 30 seconds per side. Let excess drip off and set aside on a plate.
  • Heat butter in a skillet or griddle over medium heat. Cook slices for 3–4 minutes per side until golden brown and cooked through.
  • Serve warm with maple syrup, whipped cream, and chopped pecans if desired.
